I think the funniest part about the intro for me, was that just before Joel said "Who are these people?" I did the same thing.

You could run a hopperline over the sorters instead of the water. Then you could also cover the hoppers. Any lag reduction in your area would probably be welcome.
For the items not going into the hoppers, use pickles or honey blocks. Coincidentally, Mumbo released a video today where he explained a few redstone tricks where he did this.
