Mojang is spending more time fixing problems that don't exist, or problems their unnecessary fixes create than genuinely innovating and improving the game. This is what happens when you run out of ideas.

tbh I disagree love the sheep having the color be obvious!! I do kinda wish they kept the white bits around the face but otherwise I’m a big fan
My take on this snapshot's changes:
Natural sheep colors being the same everywhere with different weighting is a good choice, no notes.
Sheared sheep no longer being indistinguishable in terms of color is a good change, though maybe the colored speckles on the body could use a revision.
Reducing the saturation with some randomness might work, after all those specks are meant to be thinned out stubbles of wool and to see the original color of the sheep, you still have the head and upper legs to work with, which shouldn't be changed.
The new spawn eggs are strange in my opinion. Yes, giving them different designs is great for colorblind distinction, but the pixel art is so good it looks too detailed for Minecraft and there is an odd lack of uniformity in places. Like most mobs have the eyeless face design, but then there are others like the drowned or the enderman or the phantom that just don't do that. And honestly, I prefer those ones (though the enderman might be worth giving a vertically stretched shape just to make it a little more distinct than just "black thing from the end" in isolation).
A surprisingly good place of inspiration here might just be How To Train Your Dragon. The dragon eggs there are all very distinct and actively avoid putting parts of the creature's anatomy on the egg itself but are still able to convey what is inside intuitively, though I think a middle ground would be better for Minecraft's purposes. I also enjoy the guardian, bee and allay spawn eggs for example, sporting distinctive features without being just a face.
Leaf litter now being biome based in color is neat, no notes.
The wolf personalities, finally, are another strange case for me. Yes, having them sound different is a nice extra bit of variance to get attached to, but either I am mishearing it or pretty much all of these sound noticeably deeper than the classic wolf. So deep in fact, that they sound bigger than the wolf looks in-game.
Big is an especially extreme example there, sounding like something that would be about the size of a ravager or at least as big as the player themself.
These may all be technically realistic, but from the glimpses I've had of sound design, exact realism is generally not something you want to go for. The underlying idea is cool, it could just use a solid bit of stylization to bring it more in line with the classic sounds.
I like the sheared sheep still showing their color.
I really like the new spawn eggs and the sheep parity but I agree that they both still need some work.
I'd like for the leaf litter to be a bit greener tbh, or for there to actually BE a green variant but perhaps that's a bit redundant.
The wolf personalities are really cute, I think cats should be given a similar treatment
For the fish eggs (maybe not the guardians) they should bring back the old scrapped fish roe textures, then they can get rid of the water ring on the textures. Besides that I love the new textures. I hope Mojang keeps up the good work

I'm so happy that Mojang finally added something from bedrock to java instead of removing it from bedrock I know they've added small things but after removing campfires burning mobs and maps being useful from bedrock for parity I started to think what they meant by parity was make everything the same even if it's worse instead of add the better features from each version, also if it's not clear already I super disagree with sheep having white wool when sheared I think it's sooooo so soo much better as it has been on bedrock and how it is now on java

I'm pretty sure the water motif on the spawn eggs aren't to help identify the mob, but rather to help point out that said mob is specifically a waterborne mob, and thus probably shouldn't be summoned in the middle of a patch of land.
The Wither and Ender Dragon spawn eggs have to be given by commands. This makes it so people are less likely to destroy their worlds without realising.
The puglin pant made me laugh, I love the new sounds for the wolves
I don't know about all of the eggs, but I think the Ghast egg would be helped by either having tentacles coming out the bottom, or give it it's red eyes

I did like the little splash of white the old Java textures had, but it would still be nice to know what color the sheep is even when it’s sheered. It also kind of made white the “default” color even though sheep naturally can be black, gray, or brown.
Maybe they could make sheep always have two colors? One their “natural” color that they get from spawning, and the other their dyed wool color? That way the sheep won’t be quite as neon, and we could still have the dye color on the sheered sheep texture.
These spawn egg changes are awful. I am 100% against this. This feels like something a mod or strange texture pack would do, it doesn't feel like Minecraft anymore. Making changes for colorblindness is one thing, but these eggs are lousy. They look like knockoff crane game prizes instead of eggs. I certainly agree with you that the water mobs all having that weird blue scarf on the bottom is a bit silly. I'm not sure how much of the community was really begging for spawn egg changes or really cared, but it didn't include me. They are labeled and all different colors already, that was good enough. I kinda found it charming the way it originally was where everything had a matching style and pattern. There was a whole Minecraftness to it.
I'm starting to really dislike all these aesthetic changes of recent snapshots. We didn't need variants of farm animals, and while a few things worked nicely like the Firefly bush, there are a lot of questionable choices and design elements that are making the game not feel like Minecraft anymore. Part of Minecraft goofy charm was/is the unrealistic nature of it. The elements of Minecraft that were exclusively Minecraft's own. It was a nice, creative base that, if you really wanted all this extra stuff, that's what modding was for. It's why Minecraft never really fought against the modding community. You could have this stuff if you wanted, but the game itself was peacefully vanilla. I like my vanilla game. I feel like I'm slowly losing it with these recent snapshots.
