Some renewability ideas I've had that could be alternatives to a crafting recipe are:

Piglin Bartering for Dried Ghasts.
Ghasts have a very rare chance of dropping Dried Ghastlings.
Tamable Ghasts using thrown Snowballs, where it'd then follow you around and you'd eventually lead it out of the Nether to complete the taming process using Water Buckets and Snow Blocks, where Dried Ghasts now only serve as a way to obtain a Ghastling which would remain small to function as a "cute pet" mob which has new functionality to improve nearby tamed Ghasts, perhaps even making the process of taming a Ghast easier by making normally hostiles Ghasts act more like a neutral mob.

If none of this sounds appealing, they could instead update the recipe to reflect the action of performing some kind of dubious alchemical process, like replacing the middle Bone Block in the recipe with Soul Sand, or even a Totem of Undying if it turns out craftable Happy Ghasts is too powerful of a mechanic if they are meant to be a rare commodity.

I dont think the ghast crafting will be broken bc the ghast isnt the jet the elytra is making it not as broken for long distance travel. It is kinda broken you will have little threats up in the air tho like maybe skeletons if you flying low and for long travels phantoms will surely keep this thing sorta balanced ? Maybe

Golems are not a living thing, they are a type of magic. In addition, they are called summoning, not crafting.

A thought I've had since I heard about the new Ghasts, what if you make a happy Ghast and it enters a portal to the neither? I would think they become the "normal" Ghasts we're used to. That would explain how they end up as the dried ghasts eventually as they eventually dry out

I might get pushback on this, but I think the center of the recipe should be a Nether Star. It is a very hard to obtain item, yet is still renewable.

Minecraft players always looking for ways to start drama, I'm perfectly happy with having the ability to craft this. Convenience, accessibility and usefulness are very important in modern Minecraft, which is where mobs like the sniffer failed, and so far from what I can tell, the happy ghast checks all 3
