    If you're using the sour cream topping, mix the sour cream, sugar, and vanilla extract in a small bowl until smooth. Spread it evenly over the chilled cheesecake before serving.

    Carefully remove the springform pan ring.     4 tbsp unsalted butter, melted

    2 tbsp granulated sugar

    4 (8 oz) blocks of full-fat cream cheese, softened to room temperature

    1½ cups granulated sugar

    1 tbsp all-purpose flour

    1 tsp vanilla extract

    A pinch of salt

    4 large eggs, at room temperature

    1 cup full-fat sour cream, at room temperature

    ½ cup heavy cream, at room temperature

    For the Sour Cream Topping (optional):

    1 cup sour cream
