Beetroot is really good animal feed. You can breed pigs with the beetroots, but it also drops seeds for chickens. Similar to wheat, but you get multiple beetroots per plant.

They’re actually the best crop to sell for emeralds!! Wheat is 20 for 1 emerald, carrots are 22, potatoes are 26, but beetroots only need 15 to get 1 emerald! I farmed a tooon of beetroots in my hardcore world for getting enchantments.
