More phases – it feels to quick for a “final boss”
Crystals – I’d think a magic item that constantly heals a dimensional dragon shouldn’t be defeated by an arrow. Give it more hp as long as it’s placed in the End, make its healing scale to the hp in the crystal, the lower health the crystal has the slower the healing the dragon gets.
Beds – Stop beds from doing so much damage, there shouldn’t be a simple cheese anyone can do.
Dragon AI – make the dragon switch between actively hunting you while the crystals are alive and trying its bests to evade you when the crystals are gone. While you’re at it add more attacks, not just charge and fireball. Give it a speed boost every now and then, make it go invisible, give it a sonic roar that makes you freeze in place and drop your weapon. Something that rattles the player.
Those are my ideas but I’m sure others have put in much more thought into it.

As someone who finds joy in challenge, I don’t think every final boss should be super hard. Minecraft is a sandbox game. It’s not a game known for its difficulty, so why make it more difficult? I personally would be okay with it being harder, but when you consider the majority of the community, I don’t think people would like it.

Maybe I’m in the minority, but I think if you’re a normal player who hasn’t been studying videos on how to kill the dragon, as a single player getting to the end and killing the dragon is a pretty good challenge.
