Turns out it's really easy to increase the basic minecraft terrain generation height without changing the entire world generation. It just takes months of learning how datapacks and world generation works from scratch (skill issue I know). If someone has already done this I might just suck at searching on the internet tbh. I have seen datapacks that increase mountain generation up to 319 but never one that unlocks the true potential of minecrafts vanilla mountains, such as this beautiful seed that I spent way too long searching for that has a peak at 371 which is over one hundred blocks higher than typical max height mountains (Seed btw: 1223286370641835, also my custom datapack link: https://drive.google.com/drive/folders/14O22Fq9V2XedUdDtlwPjJNg8fwijs6n4?usp=drive_link ).

While the vanilla max build height is 319, that can be extended easily with an even simpler datapack than what I made, but the world generation is locked to 319 unless you change a few key things with noise generation. Some world generation datapacks like terratonic do extend the generation height but that's because they add all sorts of different terrain and new noise generation that some people, including myself, think is a bit too much. Honestly it's criminal that the game limits mountain generation to around 256 blocks by just clamping and cutting off terrain beyond this soft limit, and of course the hard limit of 319. My datapack increases build height to 512 and unlocks all mountain generation limits so they can theoretically go up to this new arbitrary limit I set. This doesn't change how mountains look at all except for the very top where they are usually clamped down which in my opinion makes it look terrible unless you want to build a house at the very top.

Now I think this is pretty awesome but you know what would be even cooler? If we could take this to the extreme, does anyone know any sort of seed searching tools that allow you to sift through thousands of seeds testing for surface height given custom world generation datapacks or mods? I have tried a bunch of sites and softwares but none seem to register my datapack correctly or don't allow surface height to be measured. I'm fairly certain basic statistics say a mountain could generate up to 500 blocks or maybe even higher, it would just take some crazy luck and time finding it. So far I have used cubiomes to look for seeds which have extended areas of mountains near vanilla max generation height (256 blocks). I take these seeds and use the world preview mod to load my datapack and quickly pre-render chunks in the world preview map at reduced resolutions and scan for any peaks significantly above 320. I found this one after searching through about a billion seeds automatically and then a few thousand seeds manually. Anyways if anyone thinks this is cool and wants to help find the absolute tallest mountain possible with vanilla noise generation please reach out to me. If people request it I will make more datapacks for different versions of the game, right now I just have 1.21.9-10
