I would love to something like that. Maybe it could have a poison gas around it

maybe it drops sulfur that is heavily predicted by many currently. it could be used to make some sort of explosive gear/weapons or just more advanced tnt
I would really love if the larger end islands spawned at different Y-levels, like how the smaller end islands are scattered. As it is, they tend to level out at about the same Y-level and I think that’s a shame. Put some lower and some higher. Heck, put some large island partially on top of each other, THAT’d be interesting! It’s just so plain looking right now and I think generation like that could really do a lot.

I know this sounds complicated but imagine:
End Slime
You hit it and it teleports but leaves a smaller slime at its original location
The original slime gets smaller after the hit
hit it enough until it shrinks enough and finally dies
