What’s an item that is easy to make but rare to actually see?
what I mean is an Item that is easy to get but no one ever uses it so it's rare to see. my example is pumpkin pie as never in my years of playing the game have I ever seen someone craft it or eat it
I think the opposite for pumpkin pie, a whole a pumpkin is a rather large investment for one food item. But pumpkin pie is one of 3 end game food sources I see, along with golden carrots and steak.

I have tons of pumpkins, eggs and sugar thanks to my crop and chicken farms, so I prefer combining all 3 into pumpkin pie for more storage space. Pumpkin pie, cooked chicken and golden apples are my main food items now. I have tons of cooked fish and baked potatoes, but those seem boring. I’ll never starve though.

This was my first idea when crafters were added to the game lol. I built egg, sugar and pumpkin farms, tied it all into a crafter and made pumpkin pie for days

I made an automatic pumpkin pie crafter because all the ingredients can be made automatically without any input. I haven’t made food in months.

Obviously every block is used by someone, like I make automated pumpkin pie shops that’s run by copper golems. But personally I never use the bundles, just inventory, ender chest, shulker boxes

I pretty much only eat pumpkin pie because I don’t eat meat (in Minecraft) and the pie is nutritious.

Almost every item has some sort of use, but there are a few niche ones that you will NEVER see, not even on servers.
Java:
The thick lingering potion
Thick tipped arrows
Bedrock:
Tipped arrows of regeneration
Theres a 20 minute video that breaks it down pretty well, I’ll link it below

for every og player copper anything, after months playing and finding tons of useless copper, now that it can be used for armor and tools my brain is just too used to ignore/throw away copper even if it’s 2 blocks in to a cave and i need armor i always search for iron

pumpkin pies are pretty good as a midway point between bread and golden carrots when getting food from farmers.
