This stronghold generated up to Y:70, this is the highest I could find and it really look disturbing, the hallway is air exposed too.
In 1.17.2 strongholds can generate ~12 blocks higher but they always get mostly covered by terrain whereas in 1.16 they are completely exposed allowing these exceptional looking occurences.
