I would like to start a Minecraft world for my friend and I to both play in. I would like my friend to be able to play even when I’m not online. We both use MacBook Pros with PS5 controllers using the CurseForge Controllable mod. Which Modded Server do you recommend we use for our multiplayer world and why..? Thank you!

The controller mod is client side, so you won’t need a modded server to play with it.
You can play with whatever content-mods (e.g. Create) you want (or modpack like skyfactory or smth).
Or just a Vanilla server or even Realm if you don’t want to setup the server yourself
