Dude, lemme teach you one cool magic trick. If you hear some terrifying noises, you can actually mine 3 blocks under you and place a block above you, and you're completely fine!

Suggestion:
In a mob hide n seek, dig 3 blocks into a wall or mountain, create a tripwire that connects to a piston that covers the hole when you activate the tripwire. Inside that area, you can extend the tunnel even further by adding more doors, and at the end make a whole room of chickens. The tunnel will only be one block in height so the seeker has to mine even more blocks while you can fit in as a chicken.
