Practically (but not) infinite snow biome mix? (assuming large biomes) for “Brian’s Winter”- type adventure map (with tool destroy and block placement permissions)

I know Minecraft doesn't have cold survival mechanics, and isn't more or less difficult to survive in any mix of biomes, I just want to have a world where I spawn into the middle of the winter-y woods and build a little cabin, maybe venturing to nearby villages for trading. Vast enough that if I summited a nearby mountain with distant horizons I would not see any green, but also not entirely infinite, because maybe I want to leave one day and that could be a fun journey.
