I started using Better Enchanting in my world, but I wanted to go back to vanilla. I'm fairly new to Minecraft mods, and I wanted to know if it would be possible to go back to vanilla with a mod like this.

Unrelated, but the fact the mod is for 1.20, but not 1.20.1 is just lunacy… Barely anyone uses 1.20…
Since it looks like the mid overhauls the enchantment mechanics but only used vanilla enchants, I’d assume it would be fine to remove . Nonetheless make a backup of your world before you do.
I mean, you could just make a backup, try it and if it doesn’t work just add the mod back in
