2 npcs in the undergound jungle is good enough for a pylon, youre also better off making your plantera arena in prehardmode and having your pylon near the temple
honestly, i always do an above ground npc setup for things, but now that i see this i ask myself why, there isnt much to do up there in the above ground jungle and would be better underground.

Oh yeah I've used the Mercury and other whacky moon phase bricks in a couple scifi builds before, super cool schemes.
