I just noticed that signs are higher resolution than other blocks
This is not the case with hanging signs, just the regular. My guess is that they would feel too thick or thin if the pixels would be the same as everywhere else.
all Minecraft block textures are typically 16×16 pixels. A sign is an entity based block, if I’m not mistaken.

It’s because Signs are from a long-gone era where there was much less focus on pixel/style consistency. Hanging signs are not. Hanging signs are designed to be pixel-consistent, matching the resolution of other blocks.
If signs were added today, they’d probably look more similar to hanging signs, but Mojang can’t really change the sign to look better because it would be touching a very old and nostalgic feature, something they try not to do unless they have a good other excuse to do so, to avoid nostalgic player outrage.
