I want to trade with piglins for 10-16 stacks of gold, and I thought about using chests to put all the loot there, but I remembered that they start to aggro when you open a chest near them. Can I use barrels or some other way to store all the loot that I get during trading with them?

A barrel would probably work, or just make sure none of them can get to you when you open the chest.
Funnel under the chest, then take from the funnel

Hopper into an shulker box.
lowkey i just tunnel under the chests and open them that way. the piglins cant get me there
yeah just put a hopper underneath connecting to a shulker. but also keep ur loot in bundles after the full stacks are sorted out
