I made a build of SS Winnebah (1881), which doesn’t even have photos of, from deckplans in a book I have.

All I could find on SS Winnebah is that it was owned by the African Steamship company. Built in 1881, by Harland and Wolff. It had a length of 72 meters, so I scaled it up, so I could get details in, to 115 or so meters. But I have deck plans for it in this book I have called 'Ships, From The Archives of Harland and Wolff, The Builders of The Titanic' by Tom McCluskie.
