Gotten a few of em since, originally six but I donated one to Gunther. Don't know what other use for em. Are they just like those minerals that Become useless and just for giving to Gunther? Been avoiding to search it up since I don't want spoilers (new to Stardew valley) I'm at year 3 and still have no clue what to do with em.

No, they are not useless (to put it mildly).
They are used for getting the best sword in the game, and then also used to make your weapon and gear better.
Keep them they can be handy for many things

You can use the gay rocks to buy gay candy which is the best food in the game. Checkout the desert trader on thursdays

As for uses, you can claim the Galaxy sword at the desert. Just take one to the three pillars. And then atop the Ginger Island volcano on the forge to upgrade tools and weapons with enchantments.
