I had one show up on my farm before I knew they were a thing.
I planted regular trees to tap. Cafe back and puff, a giant mushroom.

Keep a close eye on the area just surrounding it. If something looks like a seed, use an axe to pop it and you’ll have a mushroom tree seed you can plant elsewhere.

I’ve started a whole grove of mushroom trees on my farm I probably have like 75 so far

These things are fun, though they spread everywhere in huge density if you leave them alone… which granted, can be fun. I’m not sure if they have the same proximity growth restrictions as regular trees. You can harvest a lot of mushroom tree seeds from the surrounding soil if you check up on them regularly.
I find that if you want a farm with a stable low-maintenance ecosystem, having a mushroom tree grove tends to require that you sequester them to a quarantined area away from other untapped trees while surrounding them with paths/infrastructure to keep them from taking over the farm.
Or you could just let them take over the farm because mushrooms are neat.
