I haven't finished the video yet so I can't tell if you figure it out later or not, but the thicc diamond sword didn't one-shot the salmon because it's a two handed weapon. You equipped the kite before doing that, and you can't use two handed weapons properly with a full offhand, so it was greatly nerfed.
