Totems of undying may have been used to make evokers with black magic. So it is not that something they drop but when u kill them the curse reverts. My theory

I heard a theory that Evokers use Totems’ powers for well… evoking Vexes and jaw attacks.

Because totems of undying require a “sacrifice” to activate. Evokers carry empty totems seeking a sacrifice to activate it but the player ends up killing them and activating the totem with the evokers soul.
Thats my theory on it, they maybe create the totems themselves but need a sacrifice to activate them. Which inevitably happens when you kill them so it’s a readily available totem when you pick it up

Considering it is possible to give the totem to an enemy and they will infact use it, I think Evoker’s don’t actually have them as items but rather turn into one when dying.

For them it’s a totem of life, that’s why when they die, they drop it.
Once dropped, it’s a totem of undying – since, the totems emerald eyes, gives them the ability, to learn from their masters(wielders), and adapt to new circumstances.
Tldr: no idea, m8

The totem is undying is like a horcrux. It doesn’t have the power until the soul of the evoker fills it upon death.
