I’ve always suggested to keep everything you can, and only sell Animal Products, and stuff you make from crops! But take a note of what you’ll need for a recipe or two down the line, if perfection is what you are aiming to do then it’s always good to toss a little extra in a fridge or so!!

I always stock up sap and use it to make fertilizer at the start of each new year. Saves having to buy it or collect hundreds of other ingredients for higher quality fertilizers. It’s basically free upgrades for your crops, so why not?

Personally I’d recommend hoarding all crafting ingredients, you never know when you might need them!
Don’t forget the Statue of blessings requires hella sap to craft!

if you’re worried about space, you can replace your chest with a bigger size by just placing it where the current one is. All the stuff swaps over cleanly, no mess, no fuss.

Late game, I mostly only sell processed crops and animal produce. Those forageables are useful in recipes and mushrooms are great in dehydrators.

I think any and all low cost crafting items should be hoarded like no tomorrow, only sell what is intended for sale only!

Sap is used for fertilizers, they can make getting all the gold star crops for the community center in one season fat easier since you can get them all in like 25 crops instead of like 70. The tree saps have some crafting recipes like I think a keg takes pine tar and a bee hive takes maple syrup. Fiber is good to save, tree fertilizer mushroom stumps grass starters its very useful

Two uses off the top of my head:
1. The highest quality fertilizer still uses Sap (and a lot of it, like 40 a pop IIRC?). I like this because I’m lazy to keg stuff.
2. There’s a repeating quest where you provide 100 of every color. Sap is a convenient Yellow.

before 1.6 got debuged, i walked around giving everyone sap and they love ld it and i was laughing cause i called it “my sticky hand shake”
my wife was more civilized and gave them rocks.
Now? idk eating if would be an insane handicap i guess
