Veteran player, returning after many years. This was first time seeing a bastion.
I didnt realise they could walk up to me, I panicked and lost all my gear. Also I had no idea they would be that strong!
Is there a specific way to loot these places? Like a specific route or tactic, or is it really down to brute force and fighting through them?

Apart from learning the speedrun routes, no.
Just have your sword out at all times.
Piglin brut feels like jumpscare
Bastions on bedrock are brutal
Bedrock does feel really hard to navigate, so such deaths are very normal
I see that it took you a while longer to turn arounf unlike playing on Java or PC
