Even without seeing this, this is was always what the 3 mobs would be in my mind:
Seagull = Air
Jellyfish = Water
Crab = Land

If the crab ends up winning (which it most likely will), i hope that there isn't some stupid convoluted way to get their claws like with turtles and goat horns. I just wanna be able to kill the mob and get a crab claw, maybe even some meat.

The mob vote is stupid. They need to work on fleshing out existing parts of the game rather than adding new flashy mobs just to stir up hype and give us the illusion of choice.
There are tons of mobs as well as other game items that have like 1 use.

I hate mob votes. Minecraft is the most popular, most downloaded game ever and has Microsoft backing it up.
There is zero reason why they couldn't add all three mobs.
They already screwed up anyway because unless the other two are Big Chunkas and Sussy Baka, Crab already won because of memes.
