In this video I beat Minecraft, but the whole world is an ocean with no blocks.
***For anyone wondering, I placed a lily pad then placed blocks on that. That’s how I placed my first block. Also, for the wandering trader section, I had the experimental villager rebalance enabled, allowing the wandering trader to buy items.***

You can start world in that snapshot in which you can craft a Bamboo block with four bamboo and you should just go to a jungle biome . in jungle biome fishing drops have bamboo in them by this you can get easy block and crafting table

Good video, but you did say that you couldn't access any structures however both the lunar base and nether fortress are structures and even though this made for a more interesting video it is actually possible to beat the challenge completely without structures, if you create a new world or die and re-spawn in one of the beta 1.9 snapshots you will be given a stack of end portal frames and end portal blocks and then updating to a newer version will let you actually go to the end dimension as it hadn't been added yet.
FINALLY a minecraft challenge that's more than just "can i get a villager to spawn in 1.9?"
edit: oh nevermind, structures dont generate but wandering traders do! village&pillage strikes again…
