I like to keep at least one of each item just in case I need it for gifting or a random quest and also because I’m a Stardew Horder. Beyond that I usually sell the excess bulk outside of the main gem stones like Jade, Diamonds, and rubies.

Anything Dwarven can be gifted to the dwarf… Dwarven gadget and marble can be used to craft items for you.

Otherwise I would sell everything extra *except* for Marble, because that is used to craft a Marble Brazier

The non gem ores like malicite and slate ECT the wizard likes I’d use the SDV wiki to see who likes what items the nice part is that after you give any villiger an item it goes on there gifts lists of how well they liked them so you could easily just run around and gift them as you get them in stacks of 30 so you can literally run around and do a mass gift giving and then see who likes what the best
