Some stables, a community well (because every castle needs fresh water without having to leave the perimeter) and maybe even a sewage channel coming from that well!
You can try to make a little overhang, where a Smith could work.
Also something I thought of, you could add a hoarding, a small (wooden) overhang over the sides of the tower, where soldiers could fire arrows from and throw rocks down from people trying to storm the castle, I know it’s not for the middle, but I think it’ll work wonderfully with the colours you have now!
