It is certainly not a cube or infinite. My theory is that it’s a flat plane that follows fundamentally different laws of physics to our own universe. Some physical law allows for uniform gravity throughout the whole plane. You can go thousands of kilometers up in the air and not measure any difference in gravity (yes I know the difference could be small, but no matter how small it should be measurable). Additionally we know that maps are flat and no matter how many you make and place they will always perfectly line up with reality, not needing a projection to account for curvature.

Whenever mojang shows the minecraft world it’s a ball made from cubes

I beleive that there was a Game Theory video made about this quite some time ago, they came to the conclusion that it had to be round, based on the fact that we never experience any harsh 90 degree angles whilst running around on the ground. Of course, in reality within the structure of the game it is flat, that’s how it’s programmed.
In real life we can’t tell the Earth is round from our perspective on the ground (at a glance at least, I’m not a flat earther, promise!), so the same therefore must apply to the fictional world of Minecraft, hence, round planet in Minecraft.

If we assume that gravity works in the same way as our universe, its either roundand finite or flat and infinite. Gravity is also much stronger in the minecraft world, around 3x stronger.
If the world is round it gravity always points down, as it does in our world.
If the world is flat and infinite all the sideways gravitational forces cancel out, leaving only the vertical component. This only works if it is infinite since a finite flat world would collapse into a sphere.
If the world is a cube gravity would appear to be sideways once you approach the edges of the cube, since the net gravitational forces always points to the center of mass. This never happens in game, so we can conclude that the world is not a cube
We also see that the sun and moon sets beyond the horizon. If the world is infinite the sun cannot set. We can therefore conclude (based on the assumption made in the start) that the minecraft world must be round.

I remember that in Galacticraft (and perhaps other space mods?) the world was shown to be a cube after you left it with the rocket
