I have all these gems and minerals. I don't really know why I've been hoarding them, I guess I thought I might need them for side quests but now I have a full chest. I have crystalariums for diamonds and star shards since they're the two most profitable, so I could sell those since I'm already making more. The more rare stuff, though, should I keep them? Will I ever need them or is it better to just sell it all?

When you get to desert, check shop there. Some fish in fish pond may request some strange thinks. Some times villages ask for some random thinks. Did you donate everything to museum?
Some of them are useful, others dont have any utilities. Just look it up on wiki.
With jade you create staircases to use at the skull cavern(desert). Keep them. Some gems are also very good gifts to increase friendship.
Maybe keep the jade for staircases? A dimond for crytalarium idk how to spell it and emerald for penny she loves them dwarf likes the last orange one on the middle row idk the name
I made one of those crystal machines for each, and keep em coming to sell. Then save one of each in a box in case a request comes.
Get a bigger chest, and try to keep 10 of each. You can sell the rest. Sometimes you’ll need the odd mineral or gem because your fish crave them. Some gems and minerals make very good gifts. A few of them are needed for crafting.
It always feels better if you have a few stocked away, so you aren’t kicking yourself when you need one suddenly.
Jade traded for staircases in the desert
Ruby traded for spicy eel in the desert
Diamond traded for espresso in, you guessed it, the desert!
Amethyst, Diamond, frozen tear, emerald, aquamarine, tigers eye, obsidian, topaz, lemon stone are gifts
Marble used for crafting
A few of them used for fish ponds – off the top of my head, basalt and petrified slime?
Most everything else can be sold. Check the chart on the wiki to confirm, this is just from my memory.
I keep the ones that I use as gifts and sell the rest.
As the other comments said, use the crystallarium for the crystals. But i like to use the stuff we donate to the museum for decorating. Im mapping out multiple sheds to have specific colors and try to have a nice gradient of rocks!
Some tips that others have missed and just telling you to Google:
§ **Ruby** — exchange at desert trader any day for spicy eel (+1 speed +1 luck)
§ **Diamond** — loved by Jodi, Marnie, and some others. Exchange at desert trader any day for triple shot espresso (+1 speed and stacks with a food buff)
§ **Jade** — exchange on Sundays at the desert trader for staircases. This is essential IMO. Also, you can breakdown a staircase for 99 stone later on.
You’re hoarding them because in another life, you were a dragon.
You can use them for decorating if anything
The ones you get from geodes and mystery boxes aren’t really used for quests, and if they are they’re so easy to find again that you don’t need to hoard them once you’ve donated one of each to Gunther
You can also use them to make clothes
I build a shed and upgrade it and make an auxiliary museum on my farm. Then I only keep amethyst, Jade, Ruby Prismatic shards and Diamonds
