The ex-Mojang 3d artist showed some of these designs in an interview at the start on the most recent "¿Cuánto sabes de Minecraft?" video from the Spanish YT channel ElRichMC where she showed a few of them.
She explained that she had designed and modeled one parrot for each Minecraft color, making a total of 16, but that Mojang told her that they were only going to use 4. However, she managed to convince them to use a fifth one.

That’s a shame, I wonder what Mojang has against large amounts of variants because, iirc, the axolotl has unused recolour textures too.
They will release one bird each update and call it progress
That’s sad, I wish some of these were used, especially the last one, it looks cool and there is no parrots like it

Well, if they can expand on the cat breeds and finally give us a ton of wolf colors after all these years, I see no reason why they can’t add more parrots. I’d rather we see completely brand new bird mobs, but I’ll happily take more parrot colors as well
