Had been waiting for this tree to grow for a good minute and it wouldn't so I started other stuff like flowers for the bees and figured I'd clean the area up and the single tiny grass plant blocked the tree from growing

Spruce and jungle trees both have this problem You have to get everything from around them it SUCKS
From the minecraft wiki:
Giant spruce needs at least 14 spaces above (6×6 column[Bedrock Edition only] or 5×5 column centered on the northwest sapling[Java Edition only]) when planted as 4 saplings in a 2×2 square. Also requires the 4×4 area centered on the saplings[Bedrock Edition only] or 3×3 area centered on the northwest sapling[Java Edition only] at the same level to be empty.[1]
