Whoops I fear i accidentally dug a block somewhere in the caves whilst trying to find shimmer. If i just bring the water back, will it become the ocean biome again?

Yeah. I think you need >= 1k water tiles for it to work though. Only one ocean is sufficient, you can just ignore your loss.
Ocean biome requires a lot of water and some sand at the edge of the world, and that’s it (unless I’m missing something). It will be easy to restore using bottomless water bucket.

If you do the infinite water glitch or get the bottomless water bucket you should be able to restore your ocean biome

That long tube connects to your ocean and you ended up digging through it
Patch the hole and refill the ocean, it works.
