Piston feed tapes, with observers detecting when you right click. And then just have the minecart go back and forth (left / right)

It sucks you can’t use offhand to build. I hold an axe in my main hand and the logs in the offhand and strip as in build.

If you have access to bamboo and string you can make some scaffolding, but that is slow as shit getting back up. Bubble elevator is a good shout though. Especially if this is a task you do often.
