This is why you age star fruit wine and immediately sell ancient fruit wine…
Simple fix.
2 deluxe sheds with diamond crystalariams.
2 deluxe sheds with fairy roses
But better quality tastes better (for the villagers)
I sell silver and gold quality wines other than starfruit wine which I do age to iridium. But never only wine in the cellar!
You can use fairy dust on them and each time you use it on a cask, it ages them a whole quality tier.
