Yep. You can pay a statue in the witch area to make your ex forget everything. But you have to build the hearts back up from zero.

Yeah, you can. But you have to erase his memories, so you need to unlock the Witch hut first because if you divorce your spouse they‘re all going to hate you forever unless you erase their memories. You also won‘t be able to experience his cutscenes again and after you erase their memories they don‘t have their normal Introduction dialogue when you Talk to them for the first time, but they will rather say something along the lines of “Hey you‘re the new farm… You look strangely similar… have we met before?”

A cool feature would be the ability to unlock a wedding do-over, or a vow renewal after like five years in-game or something.
