No, after challenge ends they ALL disappear (edit: big ones stay, like other big crops). They are also worth no Money basically, so use them all exclusively to meet the deadline quota (which is already hard enough!)

Yes the giant crop stays. If you wait until you have the quest again, you can chop it for a few starter beans. If you cut it down without the quest you would get nothing.
